We are always on the search for new things to eat for breakfast. We like to breakfast like kings, and so often eat a two-course meal. This recipe by Ella Woodward is surprisingly filling and is full of fresh fruit and good things. Serves 2
1 mug almond milk [300ml]
1 ripe banana, peeled
1 tbsp almond butter
1 tsp honey or maple syrup
handful of frozen berries
5 tbsp chia seeds Place the almond milk, banana, almond butter, honey and frozen berries into a blender, and blend until smooth and creamy.
Pour the mix into a bowl. Stir in the chia seeds [below].
Cover the bowl and leave in the fridge overnight, or for a least six hours, so that it sets and the seeds expand. To serve, place in a bowl and top with your own choice of fruit, granola, or perhaps a spoonful of Greek yogurt [if you are not bothered about eating dairy-free]
