We don’t just eat this tart when we have a fridge full of courgettes. Because it is so easy and quick to make, and uses frozen pastry, it looks a lot more complicated than it is. The grating of the courgettes does look a bit fiddly, but is worth it. 4 tbsp olive oil
2 medium onions, peeled and finely sliced
300g medium courgettes, grated
2 large cloves of garlic, peeled and crushed
2 large handfuls of basil leaves, torn into bits
Sea salt
Freshly ground black pepper
1 rectangular sheet [500g] of all-butter puff pastry [the Spanish frozen pastry works fine]
A beaten egg
125g buffalo mozzarella, torn into bits Heat the olive oil in a large frying pan, add the onions, courgette and garlic. Season well, cook slowly over a gentle heat for 30 minutes, stirring occasionally. They should be soft, not browned. Stir in one big handful of basil, check the seasoning.
Defrost your pastry if using frozen, according to the instructions on the packet.
Heat the oven to 220C/Gas 7. Cut a rectangle of baking parchment to fit your baking tray. Roll out the puff pastry to 5mm thick, trim to fit the baking sheet. Score a line 1cm from the edge, without going all the way through the pastry: this provides a border for the filling. Prick the middle with a fork, then brush the whole surface with the beaten egg. Put the pastry into the oven for 10 minutes, until it starts to rise and brown. Remove from the oven. Press the pastry down inside the border so it deflates. Quickly spread the middle of the pastry with the courgette mixture, dot with cheese, and scatter with more basil. Season with salt flakes and more pepper.
Return to the oven for 10-15 minutes, or until the pastry is golden brown and the mozzarella has melted. Remove from the oven and leave to cool for a minute before serving. 5 to remember

Great recipe I will try over the weekend. I also suspect you could get great results with pizza dough – it’s a variation on the Provencal pissaladiere….
