At this time of year, everywhere around us, are the large yellow globular flowers of the wild fennel plant. It grows wild in the valley and has even self-seeded conveniently in our herb bed. This summer for the first time we plan to gather the seeds, which we use a lot in cookery but have never dried our own. The bulb and flowers are also supposedly edible and the locals apparently add the stems, sliced thinly, to their olives when bottling for the aniseed flavour.
